BBQ Chicken Salad with apples, broccoli, egg, tomatoes and Gorgonzola

Servings 2

2 Chicken Breasts
BBQ Sauce

Mixed Greens
2 Hard Boiled Eggs Sliced
1 bunch Florets of broccoli chopped up
1 large Green Apple Cubed
2 large tomatoes Sliced
4 Tablespoons gorgonzola
Oil
Vinegar

To start, place a generous amount of mixed greens on 2 large plates. On top of the greens add broccoli, tomatoes,
apples, sliced hard-boiled egg and sprinkle with gorgonzola cheese. Drizzle olive oil and vinegar over the top of each plate and place in fridge to get nice and cold.
NOW, heat grill and cook chicken. Be sure to brush chicken with a generous amount of BBQ sauce on each side while cooking. Chicken will take about 4 minutes on each side to cook. When chicken is done, slice into large pieces and add hot chicken on top of cold salad, serve immediately. A GREAT EASY after work dinner by the pool!
