Dave’s California Fried Chicken Salad with Goat Cheese and Mixed Vegetables
4 Chicken Breasts
1 cup flour
1 teaspoon baking powder
1 teaspoon onion powder
1 teaspoon taco seasoning
1 teaspoon ground mustard
1 teaspoon salt
1 teaspoon pepper
1 cup beer
2 cups Canola Oil
1 Bag Mixed Greens, Cauliflower, broccoli, zucchini, Cooked Fingerling potatoes, tomatoes, hard-boiled eggs, Goat Cheese, Olive Oil, Balsamic Vinegar
To start: Put mixed greens on 4 large plates. Put on EACH PLATE: 2 florets cauliflower cut into pieces, 2 florets broccoli cut into pieces, 2 fingerling potatoes sliced, 1 tomato chopped, 1 hard-boiled egg chopped, 2 tablespoons of crumbled goat cheese. Put all the plates in Fridge and let sit while you make the chicken.
To Make chicken:
Cut each breast into thick slices, (Like a Chicken Tender). Place 1/2 cup flour in mixing bowl. Place the other 1/2 cup of flower in large mixing bowl with baking powder, eggs, onion powder, taco seasoning, ground mustard, salt, pepper and beer. Whisk all together until it comes like pancake mixture.
Heat large skillet with Canola Oil. When oils nice and hot, place each piece of chicken in flour and coat and then put each piece in batter and coat. Place in hot oil and cook turning once for about 3 minutes on each side or until chicken in cooked through. You may have to do a couple of pans of this because you really don’t want the chicken pieces touching each other. When finished cooking place on a paper towel lined plate.
Take plates of salad out of fridge, drizzle each with olive oil and balsamic vinegar, place a nice amount of chicken on top (about 1 breast each) And you WILL ENJOY!
