Filet Mignon with Red Wine Sauce and Olive Oil/Parmesan Mashed Potatoes

It’s Sunday evening and we had a house guest for the weekend. It was a crazy fun time but when she left I thought “what quick and easy special dinner can I make for 2 tonight” here is what I came up with!

2 Servings
2 Filet Mignon Steaks
Salt and pepper

Sauce:
1 teaspoon chives
1 teaspoon fresh parsley (Dry parsley works just as well)
1 clove of garlic chopped
1/4 cup chicken stock
1/2 cup red wine (I prefer Pinot Noir)
1 tablespoon butter

Olive Oil Mashed Potatoes:
4 Large Yukon Gold potatoes cut into 4’s (Keep skin on)
1/4 cup parmesan cheese
1/4 cup chicken stock
1/4 cup butter
2 tablespoons olive oil
Salt and pepper

To start:
1. Take Filet Mignon out of fridge and let stand for 1/2 to 1 hour
2. Cut up potatoes into 4’s and put in pot and boil until tender about 10 to 12 minutes.
3. In small sauce pan, melt 1 tablespoon of butter on low heat. Add garlic and cook on low for about 5 minutes. Add chives, parsley, chicken stock and red wine, turn up heat and bring to a boil. Let boil for about 3 minutes and then bring to a simmer and leave on stove.
4. On a VERY hot grill, start your Filets. (do not salt and pepper the steaks before grilling, it draws out the moisture). You are going to grill these for about 5 minutes on each side.
5. While meat is grilling, drain potatoes, add cheese, chicken stock, butter, olive oil and a a few pinches of salt and pepper. Mix on high with a blender about 3 minutes. Cover and let sit on stove.
6. When steak is done, place a filet on a plate, add a pinch of salt and pepper to each, put 1 teaspoon of red wine sauce over the filet. Place a generous helping of the mashed potatoes on the plate, add your favorite vegetable and you are good to go.

Hint: If you do not have a grill, in a frying pan you can heat up 1 tablespoon of olive oil, sear each side of the filet mignon, (about 1 minute on each side) place in cooking pan and bake 350 Degrees for 15 minutes.

I am telling you……SOOOOOO GOOD!
