Pasta with Broccoli and Sausage with a cheesy center surprise

4 Servings
Salt
1 pound penne
1 cup soft mozzarella Cheese OR Ricotta Cheese
Zest and juice of 1 lemon
Black Pepper
1 tablespoon Olive oil
1 pound ground pork sausage OR Ground Turkey Meat
1 large head broccoli
1 medium onion chopped OR 1/2 cup chives chopped
4 garlic cloves chopped
1/4 teaspoon red pepper flakes OR Cayenne Pepper
2 cups Chicken stock or you can use Bullion cube in hot water
1/2 cup fresh parsley
1/2 Parmesan Cheese

Boil the pasta drain and set aside
Mix together the soft cheese of your choice with lemon zest, a couple pinches of salt and a generous portion of pepper. Leave on counter to become room temperature.
Add Olive oil to a large pan. Add meat and break up with a wooden spoon. Cook until meat is brown about 5 minutes. Take off heat and place meat on a plate with a napkin to drain oils.
Cut brocoli tops into small florets, place pan back on heat and add brocoli and chopped onion. Make sure this is spread at an even layer in pan. Brown up a bit before stirring (about 2 minutes). Add garlic and pepper flakes and continue to cook about 2 minutes more. Add the sausage back to the skillet along with chicken stock, bring to a simmer. Cook until brocoli is tender and liquids have reduced (about another 2 minutes). Add the lemon juice, parsley and cooked drained pasta. Toss all to combine and simmer for another 2 minutes. Turn heat off, add the parmesan cheese and toss.
To serve. place a large spoon full of the cheese mixture in the center of 4 bowls and cover each with hot pasta mixture. When at table, have your guests mix it up and enjoy!!!!!

Hint: This dish is so delicious. If you have any leftovers, add all to a skillet in the morning and pour beaten eggs over it and cook until eggs are scrambled and pasta is warmed up (about 3 minutes). This makes a great breakfast!
